
Family recipes hold a special place in my heart, serving as cherished legacies to be passed down through generations. The connection between food and the sensory experience creates lasting memories that we can revisit anytime, simply by stepping into the kitchen.
Some of my most memorable memories are around family and food. Whenever I have the pleasure of hosting a family member, we often share moments of connection and pleasure over a shared dish. I keep a cherished recipe binder to collect these treasured recipes throughout my lifetime, ensuring that the legacy of family traditions lives on.

PRAZONE
Ingredients:
- 1 pound Krakowska Kielbasa, diced (Can be purchased at European Store)
- 1 pound Seasoned Kielbasa, Jalowcowa Kielbasa, diced (Can be purchased at European Store)
- 1/2 pound Wędzony Boczek, Smoked Bacon, diced
- 4-5 large potatoes, imperfectly cubed or cut (doesn’t have to be diced)
- 2 red peppers, diced
- 1 white onion, diced
- Margarine or butter
- Paprika
- Salt
- Pepper
Equipment:
- Large pot with lid
- Foil
Note: This recipe can be cooked outdoors over a fire or indoors.
Directions:
- Prepare the Ingredients:
- Dice the Krakowska Kielbasa, Seasoned Kielbasa, and Smoked Bacon.
- Peel and imperfectly cube the potatoes.
- Dice the red peppers and white onion.
- Layer the Ingredients:
- On the bottom of the pot, spread the bacon skin/ fat layer.
- Add a layer of margarine or butter.
- Place a layer of imperfectly cubed potatoes in the pot and sprinkle with salt.
- Add a generous amount of diced white onion.
- Add a mix of diced Krakowska Kielbasa and Seasoned Kielbasa, along with the diced Smoked Bacon.
- Sprinkle a liberal amount of paprika over the meat and vegetables.
- Repeat the layering process with another layer of potatoes, margarine, onion, kielbasa, bacon, and paprika.
- Cover and Cook:
- Tightly cover the pot with foil to seal in the flavors and moisture.
- If cooking outdoors, place the pot over a fire or on a grill over high heat.
- Adjust the heat to medium or low once you start smelling the food cooking.
- If cooking indoors, place the pot on a stovetop over high heat and then reduce the heat to medium or low.
- Allow Time to Cook:
- Let the Prazone cook for a while, giving the ingredients time to meld together and the flavors to develop.
- Cooking time will depend on the heat source and the size of the pot, but it typically takes around 30-40 minutes.
- Check occasionally to ensure the potatoes are tender and the flavors have blended.
- Uncover and Serve:
- Remove the foil cover and give the Prazone a good mix to distribute the flavors evenly.
- Serve the delicious Prazone while it’s still hot.
Note: Prazone is a versatile dish and can be customized to suit your taste. Feel free to add additional spices or vegetables if desired.
