Raspberry Rosemary Grilled Chicken Cheese Sandwich

Mouth-popping sweet, savory, and cheesy goodness!

Ingredients:

  • 2 slices of sourdough bread
  • Unsalted butter 
  • Good quality mayo 
  • Raspberry jam 
  • Your favorite cheese 
  • Dried rosemary 
  • Cooked chicken breast, sliced

Bake the Chicken:

  • 1 chicken breast
  • Olive oil 
  • Salt, paprika, garlic powder, pepper, dried rosemary, and oregano (to taste)

Instructions:

Prepare the Chicken:
Preheat your oven to 425°F. Coat the chicken breast with olive oil and season generously with salt, paprika, garlic powder, pepper, rosemary, and oregano. Bake for 20-25 minutes, or until fully cooked.

Once done, remove from the oven and cover to rest for 10-15 minutes. I always do this with meat because it locks in the juices and keep your chicken (meat) tender. After resting, slice the chicken thinly.

Assemble the Sandwich:
Take two slices of sourdough bread. On one slice, lightly smear some good-quality mayonnaise. On the other slice, spread a (thin) layer of raspberry jam.

Add your favorite cheese to the raspberry jam side, and sprinkle a little dried rosemary on the other slice for that pop of flavor.


Lay the thinly sliced, perfectly cooked chicken breast on one side of the sandwich.

Melt unsalted butter in a pan over medium heat. Grill or pan fry the sandwich on both sides until golden brown and the cheese is deliciously melted.


Remove from the pan and sprinkle the sandwich with a touch more salt.
